Energy Balls

I love experimenting in the kitchen, especially to make SUGAR-FREE treats! Here are 2 different "energy-balls" that are both super quick and easy to make.

Almond Coconut Balls

Ingredients

  • 1 Cup Raw Almonds

  • 1 Cup unsweetened shredded coconut

  • 10 Medjool Dates (pitted and soak in water for 10min)

  • 2 tsp organic pure vanilla extract (or crushed whole vanilla bean)

  • 1/4 Cup Raw Almond Butter (optional)

  • 1/4 Cup melted coconut oil

  • 1 Cup Raw Walnuts


Directions

  1. Add almonds, walnuts and shredded coconut to blender or food processor and pulse until ground into a fine nut flour. Remove dates from the water and combine flour.

  2. Add the rest of the ingredients and blend thoroughly. (you may need to scrape the sides of blender or food processor)

  3. Remove from blender and use hands to roll into balls. I then coat the outside with the shredded coconut for look.

  4. Let set in the fridge until firm.


Almond Banana Balls

Ingredients:

  • 1 Cup Raw Almonds

  • 2 Servings of vanilla protein powder

  • 2 Cups of gluten free oats

  • 1 banana

  • 1/4 Cup Raw Almond Butter (optional)

  • 1/4 Cup melted coconut oil

  • pure cocao nibs to taste

Directions:

  1. In a Blender add almonds, protein, coconut oil, and half the rolled oats.

  2. Then remove from blender. With hands mix in banana and the remaining oats, until the consistency is just right.

  3. Proceed to roll into a ball and add the cocao nibs on the outside.

  4. Refrigerate until hardened and ready to serve.
