Who doesn't love pancakes? It is like having desert for breakfast! The only issue is they are full of refined sugar and gluten which I am fully opposed to as you may already know. High carb breakfasts like pancakes elevate the blood sugar and then they quickly drop, leaving you tired and hungry soon after eating. A breakfast high in protein helps to stabilize blood sugar and hold off your hunger for hours. This is why for or breakfast I typically eat eggs and/or some type of protein smoothie. However on the weekends when I have a bit more time it is nice to switch things up. These protein pancakes are all they are cracked up to be!!!
Ingredients: (serves 2)
1/2 cup rolled oats
2 eggs white
1/2 cup of rice or almond milk
2 servings of protein (I use VEGA vanilla)
3/4 cups of blue berries
- Mix all ingredients except berries in a food until batter is smooth. stir in the berries. pour batter on skillet over a low flame for about 3 minutes or when the edges begin to bubble. Flip and cook for another 2 minutes and VOILA!!! Plate and add some extra berries and syrup to taste.
