Fish is one of my favorite things to eat and I eat a lot of it. I am a big fan of wild Alaskan salmon as well as some white flakey fishes. For me fish is an excellent source of protein as well as omega-3s.  

I am sure you have heard of omega-3s and maybe even know they are good for your health, but maybe you are not totally sure what up with them? Well omega-3 fatty acids are something that the human body can not produce naturally. however, we NEED it!  

To think about it with out the doctor type jargon; the fatty acids help you have more energy and increase your physical, as well as mental, capacity. Who doesn't want to be faster, stronger and smarter. I know i do!  Not to mention it helps your skin and hair.

Once you eat "brain food," maybe you will want to read up on the Doctor jargon filled reports, but for now all you need to know is the body needs it and it can't get it on its own. So try to eat your fish at least twice a week to get some of these benefits.

I have attached a recipe that I love and have made often. It is quick, easy and delicious! The image above is what it looks like before it has been cooked. I love fennel and this meal tastes fresh.

Ingredients: 

  • 1 navel orange
  • 1 large bulb fennel, cored and thinly sliced, 1/4 cup fronds reserved
  • 1 yellow bell pepper, thinly sliced
  • 2 tablespoons olive oil
  • 4 skinless salmon fillets (4 to 6 ounces each)
  • Salt and pepper
  • 1/3 cup pitted black olives, quartered (I use calamata) 

Directions:

1. Heat the broiler, with rack 8 inches from heat.

2. Grate 1 tablespoon orange zest, then cut orange into wedges.

3. On a baking sheet, toss together orange zest and wedges, fennel, bell pepper, and oil and arrange in an even layer.

4. Add salmon

5. Season vegetables and salmon with salt and pepper.

6. Broil until vegetables are browned in spots and salmon is cooked through, about 8 to 10 minutes.

7. Sprinkle with olives and fennel fronds to serve. ( I actually cook them with it sometimes to make the process even quicker)
