I am always looking for new, creative, healthy snacks. Over the weekend I did a little trial with some ingredients I always have in my cabinets and it turned into something Delish! They are great for breakfast, an afternoon snack or even desert.
1 cup of mashed bananas approximately 3 (the ripper the better)
1 banana for slicing
2 ½ cups old-fashioned oats
½ cup almond milk
¼ cup honey
½ cup applesauce
1 apple peeled and diced
1 cup of quinoa, cooked
Pre heat the oven to 375
Start by cooking the quinoa, read the package, but typically 1/2 cup dry is equal to a cup cooked. While the quinoa is cooking mash the bananas and stir in the applesauce, almond milk, and honey. Put that to the side. In a separate bowl add the cooked quinoa and oats. Slowly stir in the banana mixture to coat all dry ingredients. Once it is coated stir in the apples and place a small amount into a greesed muffin tin or in my case ramekin.
Cook for 20-25 minutes. Let cool and enjoy.
